Vellarikka Thoran | Cucumber Thoran
A Kerala style curry prepared with Yellow cucumber , a small to medium sized oval shaped dark green cucumber with yellow stripes on it. Its also known as Mangalore cucumber, madras cucumber, Malabar cucumber.
Ingredientsfor 3 servings
- 1 medium Size Vellarikka/cucumber
- 3-4 piece Green Chilli — sliced
- 1/4 cup Shallots — chopped
- 3-4 nos Curry leaves
- 1/4 cup Coconut — grated
- 1/4 tsp Cumin seeds
- 1/2 tsp Mustard seeds
- 2 tsp Oil
- As requied Salt
Preparation
Step 1
Peel the Vellarikka (Cucumber), cut and remove seeds from the Vellarikka and cut it into small pieces and keep these pieces separately.
Step 2
Heat the oil in a Cheenachatti, add Cumin seeds and Mustard seeds into this hot Oil and stir it well.
Step 3
Add the Chopped Shallots/Onion, Curry leaves and Green Chilli pieces also and stir it further.
Step 4
When colour of the Shallots/Onion, Curry leaves and Green Chilli pieces turns into golden/brown, add the Vellarikka pieces along with required quantity of Salt, stir the mix. Cover the Chennachatti with a plate and cook the Vellarikka pieces in medium flame.
Step 5
When the Vellarikka pieces are cooked well, add grated Coconut and stir it well.
Step 6
Vellarikka (Cucumber) Thoran is ready. This Thoran can serve with Chappathi/Poori/cooked Rice etc.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
