Viral Mathi Fry | Kerala Mathi Fry
A proper Kerala fry — fish tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 6 nos Sardine Mathi
- 2 tbsp Coconut oil
- 1½ tsp Red chilly powder
- ½ tsp Turmeric powder
- 1 tbsp Garlic — chopped
- 1 tbsp Shallots — chopped (Kunjulli)
- Curry leaves, a few
- Salt, to taste
- 2 tbsp Tamarind water
Preparation
Step 1
Place a pan on the stove add oil, chilli powder and turmeric powder.
Step 2
Heat the pan on medium heat and add shallots and garlic. Stir continuously.
Step 3
Add curry leaves.
Step 4
Season with salt. Stir till the raw smell disappears, it takes only 1-2 minutes.
Step 5
Pour tamarind water and Bring to a gentle boil.
Step 6
Lay the fish on top of that masala and cook.
Step 7
Flip the fish pieces after 6-8 minutes and cook that side also for 5 minutes.
Step 8
Serve while still hot with rice.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
