Vendakka Pollichathu
A delightful dish that showcases the culinary brilliance of Kerala cuisine.
Ingredientsfor 4 servings
- 10 nos Vendakka Lady's Finger
- 1 tsp Oil
- ¼ tsp Turmeric powder
- 1/4 tsp Chilly powder Cut in half
- Salt, to taste
- 1 tbsp Coconut oil
- 1 tsp Ginger — chopped
- Curry leaves, a few
- 1 nos Shallots — chopped
- 1 nos Tomato Pureed
- 2 nos Green chilly — chopped
- ½ tsp Kashmiri chilly powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Pepper powder
- Salt, to taste
- 1 tsp Lemon juice
Preparation
Step 1
Wash the okra well and cut the edges. Then cut it into two pieces like.
Step 2
Marinate the okra by adding chilly powder, turmeric powder, salt and little oil.
Step 3
Heat 3 tbsp oil in a pan and fry the both sides of okra.
Step 4
In the same pan and in the remaining oil, add chopped ginger, curry leaves and shallots.
Step 5
Cook until it becomes lightly browned.
Step 6
Next, add chopped tomato and green chilly. cook, stirring often, for a few minutes to cook the tomato.
Step 7
Add all masala powders and salt to taste. cook for 30 seconds until the rawness cooks out.
Step 8
Sqeeze lemon juice. Add fried bhindi and Stir everything together thoroughly.
Step 9
Run the banana leaf on fire for 2-3 seconds. The leaf would have wilted by now. Now wrap the masala in a banana leaf.
Step 10
Next Heat the oil in a pan and cook both sides of the folded leaf in low flame for 3 minutes.
Step 11
Serve alongside rice, roti etc.
