Spicy Jackfruit Seed Fry
Kerala-style dry fry where jackfruit is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 3 servings
- 10 Jackfruit seed/chakka kuru
- 1 tbsp Red chilly powder
- 1/2 tsp Turmeric powder
- 1 Pod garlic
- 2 Green chilly — sliced
- Curry leaves, a few
Preparation
Step 1
Peel tha jackfruit seeds and slice it.
Step 2
Marinate the cleaned and washed jackfruit seeds in red chilly powder,turmeric powder and salt to taste.
Step 3
Pour oil into a pan and heat it and add marinated jackfruit seeds init.let it go for 4-5 minutes in medium flame.Give it a stir now and then.
Step 4
When it half cooked,add sliced garlic,sliced green chilly and curry leaves.
Step 5
Give it a good stir and cook for another 3 minutes in low flame.
Step 6
Spicy jack fruit seed fry is ready.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
