Toddy Shop Crab Roast
an iconic dish that holds a special place in Kerala’s vibrant culinary heritage.
Ingredientsfor 4 servings
- 1- 1.3 kg Crab 6 Nos
- 4 tsp Chilly powder
- 4 tsp Coriander Powder
- 5 nos Garlic cloves Chopped, big
- 1 inch Ginger Sliced long
- 400 g Onion — cut into long slices
- 4-5 tsp Pepper powder
- 1 tsp Meat masala
- 4-5 nos Tomato — chopped
- Curry leaves, a few
- 3 nos Green chillies — cut into halves lengthwise
- 6 tsp Oil
- Salt, as needed

Step 2
It tastes better if we can cut crab into halves from center and detach the 2 legs. Get the crab cleaned properly. Put it in salt water + turmeric for 10 minutes to clean. I have tasted Crab from lots of seafood restaurants. Believe me, you can make this by yourselves which tastes much much better. The essence of the taste comes from the combination of pepper+crab juice+ tomato.
Step 3
The cooking is done in two stages. 1- Baking 2- Roasting.
Step 4
Boil 2-3 litres of water (Quantity enough to dip the crab pieces).
Step 5
Put 1 tsp salt in water.
Step 6
Plunge the crab in. :-Approximately after 5-8 minutes you see that the black dots turn orange. This is a good indication that the crab is cooked. Remove the pieces from water and set aside.
Step 7
Heat 4 tsp of oil in a non stick pan.
Step 8
Add chopped garlic and ginger to oil.
Step 9
After 5 seconds add the sliced chillies and sliced onions.
Step 10
Give it a good stir, for approximately a minute.
Step 11
Add sliced tomatoes to it and give it a good stir.
Step 12
After 1-2 minutes the tomato gets cooked.
Step 13
Add salt, chilli powder, coriander powder, meat masala & 2 tsp oil. give it a good stir for 4-5 minutes.
Step 14
Add some salt to taste.
Step 15
Now the gravy becomes somewhat consistent. Add 3 tsp pepper powder and stir.
Step 16
Break the cooked crab shell a bit, don`t break too much. This will ensure that the flavor gets mixed.
Step 17
Put the crab pieces in the gravy and give it a good stir for 2-3 minutes so that the gravy spreads consistently. :-It will look and smell as if we can eat, just wait.
Step 18
Pour 250ml water into the pan. (Probably you can use the water that you used to cook from Stage 1).
Step 19
Give it a good stir and Continue cooking for 3 to 4 minutes.
Step 20
The gravy has become somewhat thick. It should not be too much dry. Add 1-2 tsp pepper powder, curry leaves, 1-2 tsp oil and give it a good stir in high flame.
Step 21
You are all set.Happy cooking. This goes well with rice.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
