Tomato Mango Chutney
A perfect accompaniment to a variety of dishes, adding a burst of flavor to your meals.
Ingredientsfor 4 servings
- 4 nos Tomato (Medium — chopped
- 4 nos Green chillies Chopped into rounds
- 1/2 cup Raw mango — chopped
- 5 Cloves Garlic — crushed
- 1 tsp Kashmiri chilli powder
- 1 tsp Red chilly powder
- 1/4 tsp Turmeric powder
- 1 tsp Sugar
- Curry leaves, a few
- 1/2 tsp Mustard seeds
- 1/4 tsp Fenugreek Seeds
- 2 tbsp Coconut Oil
- Salt, as needed
Preparation
Step 1
Prep all your vegetables — wash, peel, and chop them before you start cooking.
Step 2
Warm the oil in a pan and let the mustard seeds crackle and Fenugreek seeds.
Step 3
Add curry leaves, crushed garlic and stir for a few seconds.
Step 4
Next, add chopped tomato, green chilly and fry in medium flame. Keep stirring until tomatoes break down, get cooked and become pulpy. This should take roughly 5-7 minutes for this quantity.
Step 5
Stir in chopped raw mango. Stir everything together thoroughly. Then Put the lid on and cook for 5 more minutes on low heat.
Step 6
Finally add all masala powders: Kashmiri Chilly Powder, Red Chilly Powder and Turmeric Powder. Add sugar and salt to taste. cook for one minute to let off the raw smell of masala powders.
Step 7
Add 1/2 cup water and cook till it becomes a thick consistency.
Step 8
Serve alongside steamed rice, chappathi etc.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
