Special Puttu
Steamed layers of rice flour and coconut inside a cylindrical mould — puttu is Kerala morning fuel. It crumbles apart on the plate and soaks up kadala curry, banana, or just a spoonful of sugar and ghee.
Ingredientsfor 3 servings
- Corn flour — roasted
- Eendhu podi roasted and — powdered
- Salt, to taste
- Water, to taste
- Shark, to taste
- 1/4 tsp Turmeric powder
- Oil, to taste
- 2 nos Onions — chopped
- 3 nos Green chillies — chopped
- 1 tsp Chilly powder
- Coconut — grated
- Egg beaten
- Coriander leaves, to taste
Preparation
Step 1
For preparing special puttu, mix corn flour and eendhu podi. Sprinkle salt water and wet it. Set aside.
Step 2
Cook shark with salt, turmeric powder and water. Remove the bones and mince it. Set aside.
Step 3
Fry onions, green chillies, coconut, eggs and coriander leaves in oil.
Step 4
Drop in the minced shark. Stir everything together thoroughly and take it off the heat.
Step 5
Put the powder, then put in the masala in a puttu mould and steam it.
Step 6
Special puttu is ready. Serve hot.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
