Special Matta Rice Puttu
A breakfast dish in Kerala Cuisine. Puttu has many varieties. This is a special, more tastier and easiest puttu recipe with Matta rice. There is no need of frying raw rice anymore, so let's go through the recipe.
Ingredientsfor 2 servings
- 2 cup Matta rice
- 1 cup Coconut — grated
- Salt, to taste
Preparation
Step 1
Wash and Soak the Matta rice overnight.drain the rice and set aside.
Step 2
Immediately grind it in a mixer with little salt.do not add any water as the soaked rice has enough moisture. Grind for few seconds, scrape the rice on the sides and grind again till you get a coarse powder. Do not grind for more time or you will get lumps.
Step 3
Grate some fresh coconut and keep it ready.
Step 4
The Rice Puttu Kutti or Puttu steamer, first layer with scraped coconut and then fill little rice powder and again layer with coconut and rice powder and cover with coconut layer. Steam for 5 minutes or more and you get soft and Matta Ari Puttu.
Step 5
It's ready now.No mixing with water, no lumps! Your job made easy! with Kadala curry or Bananas.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
