Simple And Easy Malappuram Beef Varattiyathu
Malappuram Beef Varattiyathu is a beloved dish from the Malabar region of Kerala, known for its rich, aromatic spices and slow-roasted beef.
Ingredientsfor 6 servings
- 1 kg Beef
- 10 nos Shallots
- 1 Whole bulb Garlic
- Piece Ginger
- 2 tsp Kashmiri chilli powder
- 1 tsp Red chilli powder
- 1/2 tsp Turmeric powder
- 1 tsp Pepper powder
- 1 tbsp Coriander powder
- 1/2 tsp Garam masala
- Curry leaves, a few
- 1/4 cup Coconut pieces
- 1/4 cup Oil Add more if needed
- Salt, as needed
- 1 cup Water
Preparation
Step 1
Wash the beef pieces well, drain and place in a cooker. Set aside. Meanwhile crush ginger, garlic and shallots.
Step 2
Convert it into a pan.
Step 3
Add all powders and coconut oil. Give a good mix.
Step 4
Place this on medium heat and the raw smell of all ingredients need to be gone. If you feel the mix is getting dry or sticking into the bottom, pour some more oil and mix it. Roast well till the colour changes. Then turn off the heat and and pour a cup of water into it.
Step 5
Pour that mix into the cleaned beef followed by a few curry leaves and Stir everything together thoroughly. Close the lid of the cooker, After the first whistle, reduce the flame and Let it cook for 30 minutes in low flame. Turn off the heat. Once the pressure is all released open the cooker.
Step 6
Set a pan over medium heat and pour in the oil and fry the coconut pieces till golden brown.
Step 7
Add the cooked beef into it and cook till the water evaporates. Give it a stir now and then.
Step 8

Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
