Pumpkin Snack
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.

- 250 g Pumpkin
- 100 g Jaggery Sharkara
- 1 cup Coconut — grated
- 1 cup Rice powder — roasted
- 4 nos Cardamom — crushed (Elakka)
- 1 tbsp Ghee
Preparation
Step 1
For preparing pumpkin snack, first cook pumpkin in pressure cooker.
Step 2
Mash well. Mix pumpkin, rice powder, cardamom, jaggery, coconut and ghee. Knead well.
Step 3
Make small balls out of it. Press it in plantain leaf. Steam let it go for 15 minutes.
Step 4
Pumpkin snack is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
