Prawns Pickle
A tangy, spicy condiment that keeps for weeks and adds a sharp kick to any Kerala meal. Made with care and stored in a clean jar, this pickle gets better as the days pass and the flavours meld together.
Ingredientsfor 5 servings
- 100 g Prawns
- 1 tsp Chilli powder
- ¼ tsp Turmeric
- 6 tsp Oil
- 50 g Ginger
- 50 g Garlic
- 1 tsp Varuthu podichathu (Uluva)
- Salt for taste
Preparation
Step 1
Fry the prawns by adding turmeric and salt.
Step 2
To the same oil(use fresh oil)add finely chopped ginger and garlic.
Step 3
When it becomes fried as cryspy,slow the flame and add chilli powder and salt for taste, take the mixture from fire and allow to cool.
Step 4
After that mix the prawns and add 1 tablespoon vinegar and uluva powder to it.
Step 5
If required you can add boiled water (cool).prawns pickle ready.
Tip
The jar must be completely dry and the spoon must be clean every time you take from it. Any moisture introduces bacteria and spoils the pickle.
