Prawns Coconut Stir Fry
Pan-fried until the edges go dark and crispy, this prawn fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 2 servings
- 250 g Prawns
- 1 tbsp Chilli powder
- 1/2 tsp Turmeric powder
- Salt, to taste
- 2 tbsp Oil
- 3/4 cup Grated coconut
- Curry leaves, a few
Preparation
Step 1
Marinate cleaned prawns with red chilly powder, turmeric powder and salt to taste. Rest it for 15 minutes. Then Heat the oil in a pan and fry it.
Step 2
When one side gets cooked, turn to the other side.
Step 3
At this time add grated coconut and curry leaves.
Step 4
Fry until the grated coconut gets nice golden color and the prawns are cooked.
Step 5
Now serve.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
