Potato Sambar - Quick, Easy And Tasty
Potato Sambar is a quick, easy and tasty dish that goes well with idli, dosa, rice, almost everything. Potato Sambar is a nutritious combo of healthy vegetables. The vegetable soup is a comfort dish, very soothing to your tummy.
Ingredientsfor 4 servings
- 1 nos Onion chopped into big pieces, small
- 1 nos Tomato — cut into big pieces, small
- 1 nos Potato — cut into big pieces, large
- 1/4 tsp Turmeric powder
- 1 tsp Chilly powder
- 2 tsp Or more Sambar powder
- 1/2 cup Toor dhal
- Tamarind paste, to taste
- Jaggery/brown sugar a small piece
- Capsicum/Carrot — optional
- Curry leaves, a few
- Coriander leaves, a few
- Salt, to taste
Preparation
Step 1
For preparing the delicious sambar, first cook toor dhal in pressure cooker nicely. Mash it and set aside.
Step 2
Cut onion, potato and other vegetables in large wedges.
Step 3
In a deep pan or any vessel put some ghee/oil and cook onion till brown.
Step 4
Add tomatoes now and stir until it is soft.
Step 5
Add turmeric powder, chilly powder and stir adding some more oil.
Step 6
Stir in the rest of the vegetables and give it a good stir until the vegetables are coated with oil and the spices. Now add the cooked dhal with little water and salt. Stir everything together thoroughly and Put the lid on and cook until the vegetables are cooked. Add water and Give it a stir now and then.
Step 7
Stir in tamarind paste, some more water(make sure not to add too much water), salt if required, sambar powder and let it boil.
Step 8
You can taste now and add more sambar powder or salt if required. As it boils, add the jaggery piece and Stir everything together thoroughly. Add cilantro/coriander leaves and season with curry leaves and mustard. Set aside.
Tip
Toast the cumin seeds lightly before grinding for a deeper, nuttier flavour in the paste.
