Potato Mezhukkupuratti
Finely chopped potato stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 8 nos Potatoes — cut into small cubes
- 1 tsp Red chilly powder
- 1/2 tsp Turmeric powder
- 1/4 tsp Asafoetida (Kayam)
- Salt, to taste
- Oil
Preparation
Step 1
Warm the oil in a pan.
Step 2
Add the potatoes and stir it once.
Step 3
Add turmeric powder, red chilly powder, asafoetida and salt.
Step 4
Cook on medium-low fire, till the potatoes are soft.
Step 5
Serve as a side dish with steamed rice.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
