Payaru Thoran
Simple, honest, and on every Kerala lunch plate — mixed thoran is coconut oil, grated coconut, and a handful of spices working quietly together. No fuss, just good food.
Ingredientsfor 4 servings
- 400 g Odiyal payaru
- 12 nos Shallots (Kunjulli)
- 3 nos Green chillies
- 100 g Coconut — grated
- 4 tbsp Oil coconut oil preferred
- 1/4 tsp Turmeric powder
- Salt, to taste
- Mustard seeds, a few
Preparation
Step 1
Cut payaru, shallots and green chillies into small pieces.
Step 2
Mix it with grated coconut and required salt.
Step 3
Boil oil in a pan and crackle mustard seeds. Stir in payaru mix and cook in low heat with a covered lid.
Step 4
Nadan payaru thoran is ready.
Tip
The pan should be completely dry when you finish — no moisture should remain. That dryness is what gives thoran its characteristic texture.
