Paruppu Vadai
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 5 servings
- 2 cup Bengal gram soaked for 3 hrs and drained for 1 hr (Kadalaparippu)
- 1 nos Onion — chopped
- 6 nos Pearl onions — chopped (Kunjulli)
- 1/4" piece Ginger — chopped
- 1 - Green chiliies — chopped
- 10 nos Curry leaves — chopped
- Coriander leaves — chopped
- 1/4 tsp Garam masala powder
- Oil — for frying
Preparation
Step 1
Grind 1 3/4 cup of Bengal gram in a mixer grinder into a coarse form.
Step 2
Add the remaining 1/4 cup of dal to the ground dal along with all the other ingredients(except oil) and Stir everything together thoroughly.
Step 3
Pour oil into a pan and heat it or a kadai.
Step 4
Make balls off the dough and flatten them into the shapes of vadas.
Step 5
Fry, till Paruppu Vadais turn brown.
Step 6
Paruppu Vadai is ready.

The Paruppu Vadai.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
