Pakkavada(Pokkuvada) - Ribbon Pakkoda
A traditional Kerala sweet snack made with care and a generous hand of ghee. The kind of thing grandmothers make for festivals and grandchildren make excuses to visit for.
Ingredientsfor 4 servings
- 3 cup Gram flour — roasted
- 1 cup Rice flour — roasted
- 2 tsp Red chilly powder
- 1 pinch Asafoetida powder (Kayam)
- Salt, to taste
- 1/2 tbsp Ghee
- Oil — for frying
Preparation
Step 1
Mix the flour with chilly powder, asafoetida powder and salt.
Step 2
Add the ghee and Stir everything together thoroughly.
Step 3
Knead the above to a smooth dough using hot water.
Step 4
Press it through the ribbon mould of a seva press into hot oil and fry it till golden brown.
Step 5
Drain off the excess oil on a kitchen towel.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
