Nutty Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 5 servings
- 1 nos Chicken
- Ginger garlic paste - 2 tbsp
- 1 tbsp Chilly powder
- 1/2 tbsp Turmeric powder
- 11/2 tbsp Coriander powder
- 50 g Cashew nuts
- 3 nos Onion
- 1/2 tsp Garam masala powder
- 1 tsp Pepper powder
- 3 nos Tomato cut in to small pieces
- 2 Strands Curry leaves
Preparation
Step 1
Cut chicken into small pieces and add 1/4 tbsp of turmeric pwdr and salt to it.
Step 2
Keep it for 15 minutes.
Step 3
Make a smooth paste out of chilly powder,garam masala powder, coriander powder,remaining turmeric powder and pepper powder by adding sufficient water.
Step 4
Make cashew paste.
Step 5
Fry the marinated chicken and set aside.
Step 6
Fry the half quantity of onion till to get golden brown colour.
Step 7
Add curry leaves and set aside.
Step 8
Cook the remaining onion until transparent.
Step 9
Add ginger garlic paste to it.
Step 10
When the raw smell is off, add the chilly paste to it and fry for a few mints.
Step 11
Add the cashew paste and tomato.
Step 12
Add the fried chicken pieces to it.
Step 13
Add enough water to cook the chicken and close the lid.
Step 14
Simmer it for 15 to 20 mints or till the chicken is well cooked.
Step 15
Add the fried onion and curry leaves to it at the time of serving.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
