Mutton Masala
Tender pieces of mutton cooked low and slow with a generous blend of Kerala spices. The gravy thickens as the meat cooks, and the flavour deepens with every passing minute.
Ingredientsfor 3 servings
- Mutton 1 kg
- Potato 1
- Turmeric powder 2 tsp
- Chilly powder 2 tsp
- Coriander powder 2 tsp
- 2 tsp 2 tsp (Perumjeerakam)

Preparation
Step 1
Heat a pan add garam masalas and perumjeeragam to it.
Step 2
Give it a good stir (it should be low flame).
Step 3
Then put the other masalas.
Step 4
Give it a good stir.
Step 5
Next, add coconut powder.
Step 6
Give it a good stir.
Step 7
Then heat the pressure cooker put oil in it and add onion,ginger garlic and green chilly.
Step 8
Cook it, stirring well and then add tomato.
Step 9
Stir and add mutton to it.
Step 10
Put all masalas to it.
Step 11
Give it a good stir.
Step 12
Pour water if needed add salt also and close the cooker and wait for 6 to 7 visils.
Step 13
Check whether its cooked.
Step 14
When its cooked add potato to it.
Step 15
Give it a good stir and close cooker and wait for 2 or 3 visils.
Step 16
Put coriander leaves.
Step 17
Give it a good stir.
Step 18
Our mutton masala is ready.
Tip
Low and slow is the only way with mutton. Rushing the cooking gives you tough, chewy meat instead of fork-tender pieces.
