Mulayari Payasam | Bamboo Rice Kheer
Mulayari Payasam | Bamboo Rice Kheer is prepared with bamboo rice. Bamboo rice sounds special and is a delicacy.
Ingredientsfor 6 servings
- 200 g Bamboo seed/rice
- 500 g Jaggery
- 3 Coconut
- 1 tsp Cardamom powder
- 1/2 tsp Cumin powder
- 1/2 tsp Salt
Preparation
Step 1
Wash the bamboo rice properly with water and set aside.
Step 2
Grate the coconuts.take 1 cup first milk,1 litre second milk and 2 liter third mulk from grated coconut and set aside.
Step 3
Pour third milk of coconut and let it boil.when it starts boil,add bamboo rice and cook till the rice is 3/4 cooked(if its not cooked well add sufficient water and cook again).
Step 4
Add jaggery into it and Stir everything together thoroughly.
Step 5
When it starts thickening add the second milk of coconut.
Step 6
When it again starts thickening add the first milk,cardamom powder,cumin powder,salt and Stir everything together thoroughly.cook for another five minutes on low heat,keep stirring.turn off the heat when the payasam is thick.
Step 7
Allow it to cool and then serve.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
