Malabar Style Egg Masala
Masala egg fry is a quick and easy starter or an appetiser. This is a spicy Kerala style egg recipe where boiled eggs cooked in roasted Garlicand spices. This recipe goes well with variety rice.
Ingredientsfor 1 servings
- 4 Boiled eggs
- 11/2 tbsp Coconut Oil
- 1/2 tsp Fennel seed
- 3-4 Cloves Garlic
- 1 tsp Kashmiri chilli powder
- 1/2 tsp Turmeric powder
- 1/4 tsp Coriander powder
- 1/4 tsp Garam masala
- Salt, to taste
- Pepper powder A fat pinch
- Curry leaves
Preparation
Step 1
Boil the egg and cut into two slice.
Step 2
Finely chop the garlic.
Step 3
Set a pan on the stove heat the oil and temper the curry leaves and fennel seed.
Step 4
Add garlic and cook it, stirring.
Step 5
Add chili powder, garam masala, coriander powder, salt, turmeric powder and pepper and mix it.
Step 6
Stir in sliced egg and Stir everything together thoroughly.
Step 7
Now turn the side and fry it.
Step 8
Malabar style egg masala is ready to serve.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
