Kovakka Curry
A spicy flavorful curry dish, very popular in Kerala. The side dish is normally served with hot rice for noon day meals. The roasted nutty flavor of coconut makes the dish unique and special. Kovakka is a tasty vegetable and is largely cultivated in Kerala.
Ingredientsfor 4 servings
- 1 cup Kovakka
- 1/4 cup Coconut — grated
- 1 tsp Coriander powder
- 1 tsp Chilli powder
- 1/4 tsp Turmeric powder
- 1 tsp Salt
- 1 tsp Oil
- 2 Red chilli
- 1 tsp Mustard
Preparation
Step 1
For preparing the Dish, first chop kovakka into long pieces.
Step 2
Set a kadai over medium heat and pour in the oil and add grated coconut, chilli powder, turmeric powder and coriander powder. Let it cook for 2 minutes.
Step 3
Cook until coconut turns to a brown colour.
Step 4
When cooled down, grind in a mixer.
Step 5
Add the ground coconut mixture to a vessel and put kovakka pieces into this. Add 1 cup of water, boil and cook in medium flame until it is fully cooked.
Step 6
Meanwhile, take a kadai, heat oil and add mustard seeds. When mustard allow to crackles, add red chilly and add this seasoning to the curry.
Step 7
Now the delicious curry is ready to serve with hot rice.the dish.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
