Konchu Thoran
Finely chopped prawn stir-fried with grated coconut, mustard seeds, and curry leaves — this thoran is the workhorse of the Kerala meal. Quick to make, always welcome on the banana leaf alongside rice and sambar.
Ingredientsfor 4 servings
- 500 g Prawns
- 1 nos Onion — sliced
- 2" piece Ginger — crushed
- 10 nos Garlic pods — crushed
- 3 nos Green chillies — crushed
- 2 cup Coconut — grated
- 1 tsp Turmeric powder
- 11/2 tsp Chilly powder
- 1 tsp Garam masala powder
- Salt, to taste
- 2 tbsp Oil
- Curry leaves A, a few
Preparation
Step 1
Clean the prawns.
Step 2
Pour oil into a pan and heat it or a kadai.
Step 3
Add onion and cook well.
Step 4
Add ginger, garlic and green chillies and cook for 2 - 3 minutes.
Step 5
Add prawns, curry leaves and salt.
Step 6
Put the lid on and cook on a low flame for about 10 minutes.
Step 7
Do not let the water dry up completely.
Step 8
Grind together coconut, turmeric powder, chilly powder and garam masala powder.
Step 9
Add the above mixture along with a few curry leaves into the cooked prawns and Stir everything together thoroughly.
Step 10
Stir continuously, until water dries up completely and a nice aroma comes. Serve hot.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
