Kerala Simple Potato Fry
Pan-fried until the edges go dark and crispy, this potato fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 1/2 kg Potatoes peeled and — cut into thin slices
- 2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Salt
- 1/2 tsp Mustard seeds
- 4 tsp Oil
Preparation
Step 1
Cut potatoes into very thin slices.
Step 2
Add chilly powder, turmeric powder and salt.
Step 3
Mix thoroughy and set aside for approximately 1/2 an hour.
Step 4
Heat the oil in a non-stick pan.
Step 5
Let the mustard seeds crackle.
Step 6
Add the marinated potatoes into the pan.
Step 7
Add some more scoops of oil if required and stir nicely.
Step 8
Cook the potatoes on low heat with the pan closed.
Step 9
Keep stirring every 5 minutes until the potatoes are evenly fried.
Tip
Patience at the dry-roasting stage is everything. The longer you let the moisture evaporate, the more concentrated the flavour becomes.
