Kerala Cuisine Chicken 65
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 1 kg Chicken
- 3 To Chilly powder or
- 3 To Coriander powder
- 1 tsp Turmeric powder
- 4 To Curd
- Salt, to taste
- 8 To Curry leaves
- 5 To Green chillies or
- 5 To Tomato ketchup or
- Oil (for frying
Preparation
Step 1
Cut chicken into small pieces.
Step 2
It should not be too small.
Step 3
Marinate the chicken pieces with chilly powder, coriander powder, turmeric powder, curd and salt. Stir everything together thoroughly.
Step 4
Set aside for 4 - 5 hrs either outside or in a refrigerator.
Step 5
You can also keep it marinated overnight.
Step 6
Heat sufficient oil in a deep bottom pan.
Step 7
Pan-fry the chicken, till its cooked well.
Step 8
It¦ll definitely turn brown and can get burnt. So on a low flame, fry the chicken little by little. As you finish frying each time, remove the chicken and place it in another deep-pan.
Step 9
Heat the fried chicken(do not use oil) on a medium flame.
Step 10
Add green chillies, curry leaves and tomato ketchup and Stir everything together thoroughly, till all the ketchup gets coated on the chicken.
Step 11
Keep heating it well on the medium flame.
Step 12
Add more ketchup, if desired.
Step 13
Add hot water(not too much) if you require gravy.
Step 14
Add a little bit of chilly powder into the hot water and keep mixing well and heating for a while, till gravy becomes thick.
Step 15
Mix properly and heat well.
Step 16
Goes well with parathas or chappathis.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
