Kerala Beef Chilly Roast
Slow-roasted in coconut oil with a generous hand of spices, this beef fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 4 servings
- 1 kg Beef
- 2 nos Onion — chopped
- Ginger garlic paste - 1 1/2 tbsp
- 1 tbsp Coriander powder
- 11/2 tbsp Chilly Flakes
- 2 tsp Turmeric powder
- 5 nos Green chillies — chopped
- 2 tsp Ginger — grated
- 2 tsp Garam masala
- Curry leaves FewI
Preparation
Step 1
For preparing kerala beef chilly roast, first marinate the beef with onion, ginger-garlic paste, coriander powder, chilly flakes, turmeric powder, garam masala and salt.
Step 2
Marinate for 1/2 an hour and pressure cook it with little water.
Step 3
Open the lid when done and cook till water is evaporated.
Step 4
In another pan, add oil.
Step 5
Add grated ginger, green chillies and curry leaves.
Step 6
Add the cooked beef and fry it till it turns brown in color.
Step 7
Kerala beef chilly roast is ready.
Tip
Thin strips cook faster and develop more crispy surface area than thick cubes. Cut against the grain for tenderness.
