Karimeen Porichathu Fry
A proper Kerala fry — fish tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- Pearl spot fish
- 4 tsp Red chilly paste 20 g
- 2 tsp Turmeric powder 10 g
- 4 tsp Coriander powder 20 g
- 2 tsp Ginger paste 10 g
- 50 g Green chilly paste
- 1 nos Lemon juice
- Salt, to taste
- 1 sprig Curry leaves
- Oil
Preparation
Step 1
Scale, clean and wash the fish thoroughly.
Step 2
Make deep slits on either side.
Step 3
Mix all the ingredients, except oil, and marinate the fish in this mixture for an hour and refrigerate.
Step 4
Pour oil into a pan and heat it.
Step 5
Pan-fry till done.
Step 6
Karimeen fry is ready. Serve hot.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
