Idli
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.

- Ingredients for Idli
- 3 cup Parboiled Rice
- 1 cup Black gram (Uzhunnuparippu)
- 1 tsp Salt
- Water, to taste
Preparation
Step 1
Preparation method for Idli 1)Wash and soak rice and dal separately for 6 hours.
Step 2
Grind rice and dal separately in a mixie or grinder. While grinding, add water until the paste becomes uniformly fine.
Step 3
Mix together rice, dal and salt. Add little water and give it a good stir to form a thick batter.
Step 4
Keep it overnight to ferment.
Step 5
Spread any oil on the idlI mould.
Step 6
Pour the batter on idli moulds and steam the cooker for about 5-7 minutes.
Step 7
Insert a clean matchstick (back end) or a skewer. The skewer should come out clean if the idlis are done.
Step 8
Serve Idli hot.
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
