Home Made Kerala Poratta
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 6 servings
- 750 g Flour
- 1 Egg
- 2 tbsp Milk powder
- Salt, to taste
- Water, to taste
- Oil, to taste
Preparation
Step 1
Knead the flour, egg, milk powder, salt and water to make a smooth dough.
Step 2
Divide the dough into equal sized balls.
Step 3
Apply oil on a clean surface to press the dough.
Step 4
Press each balls on the surface by applying oil as needed.
Step 5
Use your hands to make the dough as thin as possible. (its very tricky. Need lots of practice).
Step 6
Slice the pressed dough into thin strips.
Step 7
Roll the strips. Repeat the same for the remaining strips and dough.
Step 8
Press the rolled strips with your palm.
Step 9
Heat a pan and apply oil on the pan.
Step 10
Cook the porotta on both sides.
Step 11
Serve it with any curry as you wish.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
