Fish Cooked With Brinjal
Fresh fish cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 3 servings
- 1/2 kg Fish
- 2 cup Brinjal — cut into pieces, vazhuthananga
- 3/4 cup Coconut — grated
- Tamarind A small ball (Puli)
- Curry leaves, a few
- Oil, to taste
- Salt, to taste
- 2 tsp Chilly powder
- Turmeric powder A pinch
- 1/2 cup Shallots (Kunjulli)
- 3/4 tsp Pepper
- Ginger A small piece
Preparation
Step 1
Grind the grated coconut to a fine paste and set aside.
Step 2
Grind the ingredients of the masala together to a fine paste.
Step 3
Add some water to the tamarind and extract the paste.
Step 4
Place a pan on the stove and pour oil. allow to crackle the curry leaves and cook the ground masala paste till oil accumulates on top.
Step 5
Pour the tamarind pulp, one cup of water and required salt. Heat the vessel.
Step 6
When boiling starts, add fish and brinjal pieces.
Step 7
When the fish is done, add coconut paste and simmer for a few minutes in low flame. Remove from fire before boiling starts.
Step 8
Fish with brinjal curry is ready. Serve hot.
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
