Easy Chicken Masala Easy
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 250 g Boneless chicken sliced thinly
- 2 nos Onion — chopped
- 3 nos Green chillies
- 3 nos Tomato — chopped
- 4 Cloves Garlic — chopped
- 1 tbsp Soya sauce
- 1 tbsp Pepper
- 1 tbsp Chilly powder
- 1 tsp Turmeric powder
- 1 tsp Garam masala
- 2 tsp Coriander powder
- 2 tsp Cumin powder (Jeerakam)
- 2 tsp Tomato sauce
- Salt, to taste
Preparation
Step 1
For preparing easy chicken masala, marinate chicken pieces with soya sauce and pepper.
Step 2
Fry it in oil and set aside.
Step 3
Heat a wok and add oil. Add onion, green chillies, garlic and tomato. Cover with a lid and cook tomatoes.
Step 4
When juice comes out, add turmeric, chilly powder and garam masala.
Step 5
Add fried chicken pieces and Stir everything together thoroughly.
Step 6
Add coriander powder and cumin powder.
Step 7
When chicken is done, add tomato sauce.
Step 8
Add water if required.
Step 9
Easy chicken masala is ready.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
