Dosa-Idli Podi
Crispy on the edges, soft in the middle — this dosa-idli podi is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 10 servings
- 2 cup Black gram (Uzhunnuparippu)
- 1/2 cup Dal Parippu
- 6 nos Red chilly (Kollamulaku)
- Salt, to taste
- 2 tbsp Chilly powder
- 4 tbsp Coriander powder
- 2 sprig Curry leaves
Preparation
Step 1
Heat up the skillet.
Step 2
Add the black gram, dal and red chillies.
Step 3
Fry it on a medium flame until it goes golden brown.
Step 4
Add chilly powder, coriander powder and salt and stir continuosly.
Step 5
Add the curry leaves and stir for 1 min.
Step 6
Allow the fried mixture to cool.
Step 7
Grind it into a powder in a food processor or mixie.
Step 8
Add oil to the req amount of powder.
Step 9
Goes well with Dosas and Idlis.
Tip
The pan must be properly hot before you pour the batter. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the temperature is right.
