Curd Rice : A Perfect Lunch
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 2 servings
- Cooked Rice : 3 cup (preferably use Raw rice for making curd rice), preferably use Raw rice
- Curd : 2 cup
- Green chilli pieces : 2 tsp
- 6 Leaves Curry leaves : 5
- 3 Stems Coriander leaves : 2
- Blackgram dal : 2 tsp
- 6 nos Red chilli pieces : 5
- Coconut / Refined oil : 2 tsp
- Salt, to taste
- Boiled and cooled Milk : 1 cup
Preparation
Step 1
Get the cooked rice in a basin (bowl shaped container), add curd into the rice and stir it well.
Step 2
After about 10 minutes add the milk also into this mix and stir it further.
Step 3
Heat the oil in a frying pan and add the black gram dal, green chilli, curry leaves and red chilli pieces into the oil and stir it well.(if necessary, some mustard seeds also can burst and add it into this mix).
Step 4
When the colour of this mix turns into golden, turn off the heat and add this fried mix into the curd mixed rice and stir it well.
Step 5
Curd rice is ready and it can serve with chutney / pickle etc. At the time of lunch / dinner.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
