Crispy Chicken Lollypop
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 6 piece Chicken drumstick
- 2-3 cm Ginger
- 6 nos Garlic flakes
- 1/4 tbsp Annie seeds
- 2 tbsp Chilly powder
- 1/4 tbsp Turmeric powder
- 1 tbsp Salt
- 3 tbsp Oil
Preparation
Step 1
Grind garlic, ginger, annie seeds together to make it a paste.
Step 2
Marinate this paste with chicken.
Step 3
Add chilly powder, turmeric powder and salt to the marinated chicken.
Step 4
Set aside the marinated mix for 30 min-1 hour.
Step 5
Add little water to this marinated mix and put in cooker for 3 to 4 whistles.
Step 6
Get the boiled chicken outside from cooker.
Step 7
Pour oil into a pan and heat it and place the boiled chickens.
Step 8
Fry the chicken till it turns brown. :- Ready to eat with rice or chappathi!
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
