Chocolate Almond Pudding
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 4 tbsp Chocolate powder
- 11 nos Almonds — chopped
- 10 g China grass
- 4 Glasses Milk
- 1 Tin Milkmaid
- 1/2 nos Diary milk bar
Preparation
Step 1
First of all, take 4 glasses of milk in a container. Add some of it to the chocolate powder taken in a bowl. Stir everything together thoroughly.
Step 2
Now, pour the chocolate milk solution into the container with milk by stirring continuously.
Step 3
Add one tin of milkmaid to this.
Step 4
Boil it in low flame. Keep stirring.
Step 5
Meanwhile, boil 10 grams of china grass in water.
Step 6
Pour the china grass essence into the chocolate milk solution.
Step 7
Pour the solution into a suitable container.
Step 8
Sprinkle the chopped almonds on top of it. Let it stay outside until the solution becomes cool and sets itself.
Step 9
Grate the chocolate bar using a grater.
Step 10
Garnish the pudding with the grated chocolate bar.Refrigerate it for at least 2 hours. The chocolate almond pudding is ready to be served cold.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
