Chicken Coconut Stir Fry

Ingredientsfor 3 servings
- 250 g Chicken thin strips, boneless
- 1/2 cup Curd
- 2 tsp Garam masala
- Ginger garlic paste - 2 tsp
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- Sugar A pinch
- 2 tbsp Rice flour
- 1 tbsp Corn flour
- 1 tsp Mustard seeds
- 1 nos Capsicum — sliced
- 1 nos Onion — sliced
- Curry leaves, a few
- Cashew nuts — chopped
- 1 cup Coconut — chopped
- 1 tsp Ginger — grated
- 1/2 tsp Cumin
- Salt, to taste
- Coconut oil, to taste
Preparation
Step 1
For preparing chicken coconut stir fry, marinate chicken with rice flour, corn flour, turmeric, chilly powder, garam masala, ginger-garlic paste, sugar and curd.
Step 2
Set aside for 15 minutes.
Step 3
Fry it in oil and set aside on tissue to drain oil.
Step 4
Heat little oil in pan, add mustard seeds and curry leaves.
Step 5
Add onion, cumin and ginger. Fry for a while.
Step 6
Add coconut pieces and then capsicum.
Step 7
Add cashew and fry again.
Step 8
Add fried chicken strips and Stir everything together thoroughly.
Step 9
Serve super hot.
Step 10
Chicken coconut stir fry is ready.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
