Chicken Chellu
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 1/2 kg Chicken small pieces
- 3 tsp Oil
- 2 nos Red onions medium
- 1 nos Tomato
- Spinach/Palak A handful, 6 stems
Preparation
Step 1
Grind together the ingredients for grinding to a thick paste.
Step 2
Clean chicken with fresh water and drain water.
Step 3
Mix it with chicken and refrigrate for 10 - 20 minutes to marinate.
Step 4
Set a pan over medium heat and pour in the oil.
Step 5
Fry onion till medium golden brown.
Step 6
Add tomato and chilli powder and fry for about 5 minutes.
Step 7
Add spinach to it and keep stirring. Keep on low heat.
Step 8
Heat 1 tbsp of oil in another pan.
Step 9
Add chicken and cook it well till the water dries off.
Step 10
Finally mix the above mix with the chicken after it is well cooked.

Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
