Chemmen Puttu
The breakfast that powers most of Kerala before 8 AM. Rice flour, grated coconut, and steam — nothing more, nothing less. The texture should be fluffy and loose, never dense or packed.
Ingredientsfor 3 servings
- Rice flour 1 cup
- Water, to taste
- Salt, to taste
- Prawns 1 kg
- Onion 1
- Green chilly 3
- Ginger 1 inch piece
- Garlic 3 cloves
- Chilly powder 1 tsp
- Coriander powder 1 tsp
Preparation
Step 1
Cook prawns using salt and turmeric powder.
Step 2
When its half cooked pour ginger,garlic and tomato (ginger garlic should be thin sliced ).
Step 3
Mix it well.
Step 4
Add onion and green chilly to it.
Step 5
Add chilly powder and coriander powder to it.
Step 6
Give it a good stir and close the pan and allow it to get cooked.
Step 7
When its cooked off the flame.
Step 8
Make puttu podi by using rice flour, boiled watert and salt.
Step 9
Then take a puttu maker pour coconut first then rice flour then our prawns masala then again rice flour coconut and continue same until its filled.
Step 10
Then keep it on flame to get cooked.
Step 11
When the steam came out and its cooked, take it out from the steamer.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
