Cauliflower Podi Thoran
A classic Kerala thoran where mixed meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 4 servings
- 1 small Cauliflower — grated
- 1 / Coconut — grated
- 1 / Cumin seeds
- 3 nos Green chilly
- 1 Pod Garlic
- 1 / Turmeric powder
- 4 nos Small onions — chopped
- 1 / Mustard seeds
- 3 nos Dried red chilly
- Curry leaves
- 2 tbsp Coconut oil
- Salt, as needed
Preparation
Step 1
Put the lid on and cook the grated cauliflower with Turmeric powder and salt. ( Sprinkle little water if needed ) Give it a stir now and then till all the water drains and become dry.
Step 2
Grind the grated Coconut with Cumin seeds, garlic, green chilly. Add this ground coconut into the cauliflower and Stir everything together thoroughly.
Step 3
Pour oil into a pan and heat it, allow to crackle Mustard seeds and add dried red chillies, chopped small onions, curry leaves. Pour this over the Thoran and close it.
Step 4
The cauliflower Thoran with steamed rice.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
