Carrot Gumthi
A home-style Kerala dish made with care and the kind of spice knowledge that comes from watching someone else cook it a hundred times. Each step matters, and the result is worth the effort.
Ingredientsfor 4 servings
- 2 nos Carrot
- 5 nos Eggs
- 10 nos Raisins
- 5 nos Cashew nuts
- Oil, to taste
- 1 cup Sugar
Preparation
Step 1
Cook the carrots in water.
Step 2
Grind the cooked carrots with 1 egg. Set aside.
Step 3
Mix the sugar thoroughly with the other eggs.
Step 4
Add grinded carrot in it. Stir everything together thoroughly.
Step 5
Fry the raisins and cashew nuts in oil.
Step 6
Heat the oil in a bottom thick vessel and pour the mix in it.
Step 7
Let it cook for 10 minutes.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
