Brinjal Masala

- Onion : 1 no (chopped
- Ginger Garlic crushed : 1 tsp
- Garam masala : 1 tsp
- Tomato : 2 nos
- Turmeric powder : 1 tsp
- Chilli powder : 2 tsp
- Pepper : 1 tsp
- Egg masala powder : 1 tsp
- Water, to taste
- Mustard : 1 tsp
Preparation
Step 1
Heat the oil in kadai, let the mustard seeds crackle, add onion, ginger-garlic and fry well.2) Add the turmeric, chilli powder, pepper, egg masala nd fry again.3) Add tomatoes, brinjal, salt and little water.
Step 2
Put the lid on and cook well.
Step 3
Brinjal masala is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
