Beef & Liver Varattiyathu
Slow-roasted in coconut oil with a generous hand of spices, this beef fry develops layers of flavour as it dries out on the pan. The patience pays off — every piece is coated and concentrated.
Ingredientsfor 3 servings
- 250 g Beef & liver
- 2 nos Onion
- Coriander leaves, to taste
- 2 tsp Garlic paste
- 3 nos Green chilly
- 1 ½ Tomato
- 1 tsp Chilly powder
- 1/2 tsp Garam masala
- 3/4 tsp Pepper powder
- 1/2 tsp Turmeric powder
- 1/2 tsp Cumin seeds
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Cook the beef with tomato, turmeric powder, chilly powder, salt and 1 cup water.
Step 2
Heat the oil in a clay pot and allow to crackle cumin seeds in it.
Step 3
Add onion and cook it, stirring again for 5 minutes.
Step 4
Add garlic, coriander leaves and green chilly. cook again.
Step 5
Add cooked beef and masalas.
Step 6
Let it go for 10 minutes on low heat or till the water evaporates.
Tip
The coconut pieces should get slightly crispy along with the beef. They add a textural contrast that makes the dish.
