Banana Egg Cake
Banana egg cake is a soft and moist cake that is ridiculously easy to make.this cake can be made with whole wheat flou or mix of wheat and plain flour or just with plain flour.
Ingredientsfor 6 servings
- 5 Egg
- 1 cup Flour
- 3/4 cup Sugar
- 1 Banana
- Coconut half cup — grated
- Cardamom powder pinch
- Salt pinch
Preparation
Step 1
Cut the banana into small pieces.
Step 2
Heat 2 tbsp oil in a pan and cook banana and grated coconut seperatly till lightly browned.
Step 3
Beat the egg with sugar for 4-5 minutes.
Step 4
Add flour and cardamom powder and salt.mix until just combined.ensure there are no lumps.
Step 5
Add 3/4 th portion of fried banana and grated coconut into it and whisk together.do not beat.
Step 6
Convert the mixture into a non stick vessel,cover the top and let it go for 20-25 minutes in low flame.
Step 7
Garnish the banana egg cake with remaining fried banana and grated coconut when the cake is half cooked.
Step 8
Serve the banana egg cake as a tea time snack.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
