Bachelor Masala Ghee Rice
Kerala-style flavoured rice — each grain separate, gently spiced, and cooked until it is just tender. A squeeze of lime and a handful of fried cashews finish it off.
Ingredientsfor 4 servings
- 4 cup Basmati rice
- 1/2 cup Ghee
- 3 nos Onions
- 3 tsp Masala powder
- Cinnamon A small stick (Karugapatta)
- 4 nos Cardamom (Elakka)
- Cumin seeds A pinch (Jeerakam)
- 1 tsp Whole peppers Kurumulaku
- 2 tsp Salt
Preparation
Step 1
Heat half cup of ghee in a pan.
Step 2
Add chopped onions and stir, till red.
Step 3
Add masala powder, cinnamon, cardamom, cumin seeds and few whole peppers and give it a good stir.
Step 4
Add basmati rice to this and give it a good stir, till the rice changes colour.
Step 5
Add water(1 cup rice : 1.5 cups of water), salt and cook, till rice is done and water is dried up.
Tip
For each cup of rice, use slightly less water than usual when adding other liquid ingredients like coconut milk or stock.
