Zhunka
Easy, honest, and unpretentious — this snack is the kind of thing Kerala homes make on a whim when guests arrive or when the afternoon stretches on. No fancy ingredients, just good technique.
Ingredientsfor 4 servings
- 2 cup Gram flour Kadalapodi/Besan
- 2 nos Onions
- 2 nos Green chillies — chopped
- 1 nos Tomato — chopped
- 2 nos Garlic cloves — chopped
- 1/2 tsp Chilly powder
- Coriander leaves — chopped
- Curry leaves, a few
- Salt, to taste
- 3 tbsp Oil
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds (Jeerakam)
- 1/2 tsp Turmeric powder
Preparation
Step 1
Roast the gram flour in a pan till it gets golden brown. Set aside.
Step 2
Chop onions, tomatoes and garlic into small pieces.
Step 3
Set a pan over medium heat and pour in the oil.
Step 4
Add all the seasoning ingredients. When they allow to crackle, add chillies, curry leaves, garlic and turmeric powder.
Step 5
Add onions, tomatoes and garlic. Fry for a few minutes.
Step 6
Lastly, add besan, chilly powder, salt and little water. Stir continuously with no lumps. Sprinkle some water, stir and Put the lid on and cook for 2 minutes. Open the lid and stir. Serve hot.
Step 7
Garnish with coriander leaves.
Step 8
Goes well with Bhakari(jowar roti).
Tip
Grinding spices fresh makes a noticeable difference. Pre-ground powders lose their punch within weeks. Buy whole, toast lightly, and grind as you need.
