Lady's Finger-Bhindi In Coconut Curry
Lady`s finger/bhindi/vendakkai pieces are fried and cooked in coconut milk and other ingredients.
Ingredientsfor 3 servings
- 125 g Lady’s finger/Bhindi — cut into 1 1/2 inch pieces
- 1/2 cup Coconut milk
- 1 Spring Curry leaves
- 1/4 cup Shallots/small onions (Kunjulli)
- 2 nos Green chillies — slit
- 1/2 tsp Gharam masala powder
- 11/4 tsp Coriander powder
- 3/4 tsp Red chilly powder
- Ginger — chopped
- 1 tsp Saffron powder
- 1 tbsp Coriander leaves — chopped
- 11/2 tbsp Oil
- Salt, to taste
Preparation
Step 1
For preparing lady¦s finger/bhindi in coconut curry, first fry the ladies finger pieces in oil till it goes golden brown. Set aside.
Step 2
In the remaining oil, cook shallots, green chillies, curry leaves and ginger for a few minutes.
Step 3
Stir in the fried ladies finger, gharam masala powder, chilly powder, saffron powder and coriander powder.
Step 4
Stir everything together thoroughly and fry till the masala is well coated on the bhindi pieces.
Step 5
Pour coconut milk and boil for few minutes.

Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
