White Pumpkin Soup
A light, warming broth seasoned with black pepper and curry leaves. This is not the kind of soup that tries to be a meal — it is the kind that settles the stomach, clears the head, and warms you from the inside.
Ingredientsfor 8 servings
- 500 g White pumpkin
- 1" piece Ginger
- 2 nos Green chillies small
- 3 - Coriander leaves
- 1 tbsp Butter
- 5 tbsp Coconut powder
- Salt, to taste
- Pepper powder, to taste
Preparation
Step 1
Heat butter in a pan.
Step 2
Add chopped white pumpkin, sliced ginger, sliced green chillies and chopped coriander leaves.
Step 3
Fry, till the raw smell goes.
Step 4
Add little water and allow the pumpkin to boil.
Step 5
Allow it to cool.
Step 6
Blend the pumpkin in a mixer grinder.
Step 7
Strain the soup.
Step 8
Boil the soup again adding required amount of water for soup.
Step 9
Mix 5 tbsp of coconut powder in little water and add to the boiling soup. Allow to cook.
Step 10
Finally, add butter, salt and pepper. Serve hot.
