Fried Onion Chicken Chukka
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 6 servings
- 4 nos Onion
- 3/4 kg Chicken
- 2 tbsp Red chilly powder
- ¾ tsp Turmeric ppowder
- ½ tsp Garam masala
- 1 tsp Pepper powder
- 1 tbsp Ginger and garlic — crushed
- 2 tbsp Coconut Oil Need oil for frying onion too
- Salt, to taste
Preparation
Step 1
Set a kadai over medium heat and pour in the oil and add sliced onion.
Step 2
Fry until golden brown, convert Into a plate.
Step 3
Wash, clean and drain the chicken pieces.
Step 4
Add all masala powders.
Step 5
Add ginger and garlic.
Step 6
Add fried onion.
Step 7
Stir everything together thoroughly.
Step 8
Heat a pan and add the marinated chicken along with curry leaves. Give it a stir now and then, Put the lid on and cook until done.
Step 9
Fried Onion Chicken Chukka is ready.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
