Fried Egg Curry
A unique dish that blends the simplicity of fried eggs with the rich flavors of a curry.
Ingredientsfor 4 servings
- 4 nos Eggs
- 2 tbsp Oil
- 1/4 tsp Cumin seeds (Jeerakam)
- 1 tsp Garlic — chopped
- 2 nos Onion — chopped
- 1 tsp Red chilly powder
- 1/2 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 2 nos Tomato Pureed
- Coriander leaves, a few
- Salt, to taste
Preparation
Step 1
Heat a tadka and brush little oil. Pour one egg and sprinkle little salt and chilly powder. After few seconds, flip it and cook the other side.
Step 2
Convert it into a plate and set aside.
Step 3
Pour oil into a kadai and heat it and add garlic and cumin. cook for 30 seconds.
Step 4
Stir in chopped onion and green chilly. cook until it becomes lightly browned.
Step 5
Stir in all masala powders and stir for a few seconds to rid off its raw smell.
Step 6
Then pour tomato puree.
Step 7
Cook for 3- 4 minutes in low to medium flame.
Step 8
Stir in the fried eggs.
Step 9
Fold everything together gently and add chopped coriander leaves. Cook for another 2-3 minutes in low to medium flame until the gravy thickens. take it off the heat.
Step 10
Serve it along with chappathi,pathiri etc.
Tip
For a thicker gravy, cook uncovered on medium heat for the last few minutes. For a thinner consistency, add a splash of warm water.
