Watermelon Peel Pickle
A different pickle made with outer layer or the skin of the watermelon, which is usually not consumed. If you thought the watermelon rind was just for the compost bin, think again!.
Ingredientsfor 3 servings
- 500 g Watermelon Peel preferebly green ones
- 1/2 cup Chopped Green chilli vertically — chopped
- 1/2 cup Chopped Ginger vertically — chopped
- 1/2 cup Chopped Garlic Vertically — chopped
- 10 Curry Leaves
- Vinegar, as needed
- 3-4 tsp Chilli Powder
- Salt, to taste
- 1/2 tsp Turmeric Powder
- 1 tsp Asafoetida
- 1 cup Gingelly Oil
Preparation
Step 1
Remove the outer portion of the Peels slightly and cut them (preferably Vertically) into small, thin pieces.
Step 2
Heat Water and put the Peel pieces into this hot water, add some Salt and boil it for about further ten minutes. Then remove the water from the pieces and keep them aside.
Step 3
Heat the oil in a Cheenachatti/Frying Pan, fry the chopped Ginger, Green Chilli and Curry leaves (either separately or together) and when colour of Ginger, Green Chilli and Curry leaves turns into golden/brown, change them into a plate and set aside.
Step 4
Fry the boiled Peels in the remaining Oil and add Red Chilli powder, Turmeric powder, Asafoetida powder and stir it well.
Step 5
Next, add the fried Ginger, Green Chilli, Garlic pieces and required quantity of Vinegar and Salt also and stir it further.
Step 6
Watermelon PEEL Pickle is ready. This Pickle can serve with Parotta/Chapathi/Poori/Dosa.
Tip
Mustard oil needs to be heated to smoking point and then cooled before adding to the pickle. This removes its pungent raw flavour.
